I'm so happy the Giants won the Superbowl. Phil hates the Patriots so he has conditioned me to not like them as well. We had a fun little party with some fun friends and yummy food. Here is a queso dip that is SO GOOD! Thanks Catherine.
Catherine's Queso dip
1 lb ground beef -cook-(add minced onion and salt and pepper)
add to pot over medium heat
1 can diced tomatoes
2 cans diced green chilies
1 can ranch (texas, whatever you can find) style pinto beans
3/4 jar (16 or 24 oz) favorite salsa
1 block of velvita cheese (cut into cubes)
1 block cream cheese
make sure cheese is melted and DOESN'T burn
then add
1 can green enchilada sauce
1 cup shredded cheddar cheese
I transfered mine to a crock pot to keep warm, but you can keep in on the stove over warm.
You have GOT to try this- SUPER good!

This is funny, but I got your address off Mandi's site. I recently joined the blog world and have found myself obsessed ever since. I need to learn to balance this too. Anyway-as usual I didn't even watch the Super Bowl, but the dip looks fantastic. It looks like life is treating you good. Did you make it to the 11 year reunion?
